A word from the Bakery:
This bread is made my making a quick sponge starter consisting of boiled water and toasted barley flour. This brings out flavor and helps with the texture of flours that tend to create sticky and dense doughs, such as ryes, barley and buckwheat. This is our first bread using barley flour! We get our barley from Anson Mills who specialize in native heirloom grains.
