WEEK 2 Cheese Share (Full Season Share)




 

The Grey Barn and Farm was established in 2009 in Chilmark. With 100 acres of green pastures, oak woods, and salt air, Grey Barn is home to a herd of 32 Dutch Belted cows. As a heritage breed, the cows are dual-purpose and well-suited to be raised on grass: wildflower spangled pasture in summer and high-quality dry hay in winter. Boasting Certified Organic land and products, Grey Barn produces rich, flavorful, GMO-free milk that reflects the land and the seasons. In the summer months the long sunny days and salty morning dew provide milk that is anywhere from herbaceous to meaty while the winter produces milk that is buttery and sweet. This ever-changing terroir allows the farm to make cheese that pleases the curious palette.

A perfectly pungent little square of washed rind cheese, Prufrock is yeasty, lactic, and fruity when young and takes on round, rich, briny, umami flavors as it matures. The Grey Barn and Farm’s proximity to the sea as well as its cool, damp climate provide the ideal environment to develop this cheese inspired by similar cheeses from northern France. Nutty with hints of tropical fruit, the paste has a thick, soft, yielding texture. Named after T.S. Elliot’s poem, “The Love Song of J. Alfred Prufrock,” this cheese has received gold in the World Cheese Awards 2021, as well as the Good Food Award in 2020 and 2021, among many other accolades. Pair with crisp acidic white wines like Chenin Blanc and Gewurztraminer, medium bodied red wines like nebbiolo and Cabernet Franc, dry cider, and Belgian-style trappist ales.
