Founded by a self-proclaimed “serious hippie” and mother of four, Cypress Grove has promoted fresh, local ingredients since its inception in 1983. The dairy is managed primarily with the health and happiness of their herd in mind, as evidenced by their 100-percent Humane Certified score by the American Humane Association for the last three consecutive years. From tangy fresh goat cheeses to soft-ripened signature classics and buttery aged cheeses, Cypress Grove is keen on helping consumers discover their own “favorite fromage moments.”
Bearing the cheeky label of a sheep cruising on a motorcycle, Lamb Chopper is as fun to say as it is to consume. A buttery color, smooth texture, and mild yet complex flavor comprise this cheese, which pairs well with sautéed mushrooms and polenta, brown ales, IPAs, porters, sauvignon blancs, unoaked chardonnays, and Vouvrays. Due to the higher fat in sheep milk, Lamb Chopper is semi-firm and meltable, as well as nutty and subtly sweet. The cheese is aged for three months and appeals to a broad range of eaters. In fact, Cypress Grove has nicknamed their creation the “type O” cheese due to its versatility and appeal.
